Courgette & Carrot hash browns

2 courgettes, grated

1 carrot, grated

1 medium potato (about 250 grammes) grated

1 small onion, finely chopped

25 grammes flat leaf parsley, finely chopped

5 tablespoons cornflour

½ tablespoon sunflower oil

½ teaspoon ground cumin

½ teaspoon sea salt and pepper

METHOD

1. Preheat oven to 200°C, gas mark 6. Line a baking tray with parchment.

2. In a large bowl mix together the grated courgettes, carrot, potato and salt. Leave to sit for 5 minutes.

3. After 5 minutes take a handful of the mixture and squeeze out the excess liquid, putting the squeezed out mixture into another bowl.

4. Add cumin, parsley and cornflour, stir to combine.

5. Divide the mixture into 6, then flatten onto the parchment. Drizzle oil over and bake for 30 minutes, until golden.
